My 8-year-old has been researching on Balanced Diet; her weekly school unit of enquiry topic. While observing her I realized how the concept of diet has changed and the word ‘balanced’ sounds almost nostalgic. Being a home to a gold medallist in nutrition (let me clarify…my better half) and myself who studied food nutrition as a professional course it was déjà vu.

I feel a bit morose for the word ‘Diet’ as it has got lost and its verb form ‘Dieting’ has displaced it not only from our dictum but also from our core or frame of mind. Even Google is now no more confused and the moment you search for ‘Dirt’ it throws up all new methods of losing weight and the sponsored ads is full of some marketeer trying to shout louder than the rest on how he has the secret plan for you to look beautiful, turn happy and have the sexiest body all with just his meal plan. The only one left tethering to the original meaning is Googles poor cousin Wikipedia; no doubt they are running campaigns to survive. You heard right – the word ‘Diet’ means the total amount of food consumed by us. So, it is a whole and not a sliver of the food you need. The only group who could possibly argue are physicist as they can produce energy with fusion as well as fission.

So, if Diet is a whole what is really a balanced diet. One could go into a Zen mode to describe it as what your nature provides for or works with – Air, Water, Fire, Earth and Space. Its obviously right but how does one really make it pragmatic and possible every day? One thing which people don’t understand is that it’s hard to buy and use the exotic stuff talked about by dieticians. You don’t get one portion sizes typically and eating of the fridge after a point is pointless. Now we are four in the home and kids are kids, they want to eat their stuff and that to both of mine have distinct tastes and are very opinionated. So, it sounds like almost cooking 4 meals every time. Celebrities typically have a cook at their disposal so someone can plate and present it to you 24X7 as per your needs. I am definitely less privileged and even by choice would not want people generally floating in my home. Anyways even if you figure out the way to get you Quinoa, Kale and microgreens is it really helpful? Maybe it can help starve you and make you look thinner for a while. But it’s a) not sustainable and b) absolutely not healthy.

So, how, and what should you eat? Here is what we all studied in our science class – Saliva in the mouth digests carbohydrate first so the first type of food to start breaking down is carbs. Missing carbs means saliva goes wasted and the food is not moulded for rest of the action. The follow up sequence is carbs & saliva, proteins & stomach enzymes, fat & bile and sugar and pancreas. So, if you eat protein rich diet or low fat, the body enzymes are naturally imbalanced. Eating coconut is considered by most dieticians, but on the contrary it’s one of the technically sound foods. It has carbs on the outside and fat on the inside. So, when you eat it the saliva acts first on the carbs, digests it and the fat is processed by bile in the liver. Now look at chips, it has fat on the outside as it is fried and carbs (potato) on the inside. Saliva tries hard but can’t digest the fat and later there is nothing in the stomach or intestines to fix the carbs in potato. I come from a typical Maharashtrian family. Here is how my grandma served food – rice and dal to start, so lighter carbs with some protein, followed by more cereals (chapati / bread) which are a bit heavier carbs once the enzymes have been triggered. You eat proteins and other stuff with it. Ghee on proteins was a must as only fat can help coagulate the protein and make it easy for processing in the stomach. So, net-net the food technique matched body technique. Now look at a quasi-planned diet. Start with Salads, which are more of water-based vitamins with low carb. They add fibre but do not help trigger any enzymes across the chain. Throw in some proteins – nuts or beans, again without the carb. It might help if one has the bread rolls served. They seem to have gone out of fashion though.

It is worth it to evaluate your body performance and triggers vs the meal plan hence. I suggest stick to basics and ingredients that are local. Moderate each part of the food elements and eat well enough. Going back to the elements approach, one must feel happy and satiated after a meal. Being full enhances enzyme hormones and allows our nerves to be calm. The most intense activity by the body is digestion; yes, even more than exercising and hence you must allow the zen mode to prevail for a good synthesis to occur. When you eat well you produce energy that can help you burn extra calories and sharpen your day….so balance it out.

Well we must say we had a great run in exploring some wonderful eateries serving Biryanis. To much of my surprise finding 7 awesome Biryani joints in such a small area was beyond expectations. It just goes to show how popular Biryani is and that it is a cult in our culture. This was obviously the last one and it does not feel like a summit yet. I guess the thirst and passion to find one more is still alive. Though we close here, I must say that the trail has been very rewarding on bonding with my kids a lot. Really thankful….. The buck stopped at Bamboo….a unique experience and a very subtle Biryani to follow.

The place was full and for the first time we had to wait for a table. I do not know how the captain anticipated our choice, but he offered to place our Biryani order while we waited. People around knew their stuff and this makes one so much more confident of the food to come. The portions are big and that sometimes means that you cant order more. But just the one did the trick…

You can see the happiness on the faces…waiting for the bamboo feast. The food was very nice, subtle and flavorful. We found it hard to hold back that one more….morsel.

Good news is that while the Biryani Express has come to an end…our trip to my daughters dance classes is going to be on for a few more years…May be we find another trail or may be we get to real reviewing…lets leave it for the Spring to come in and clear the air.

Well its been a while since I wrote in the blog. For starters i was just too lazy to write. I do not know if this happens to many of you but there are bouts of motivation pangs I get. And sometimes I tend to drag on things for no reason. So it happened after we went to Chikpet Donne Biryani House branch at Kalyan Nagar.

The place is a bit clouded by other signboards and sometimes hard to find. For us its on a beaten path from the place we usually park our car to the ballet lesson. So just a pit stop with no detours. This was again without my son or just between us Daughter and Papa. Its always easy to deal with the quiet ones when the brats are away.

The place was a little more spacious than that at the original branch in Chikpet. It has table service and is like any other basic eatary.

The Biryani was power-packed with spices and hot with generous green chilies. So while I liked it, it was the first time my daughter was not might impressed. For those who albeit like the hot food to deal with the tropical heat, you have a treat on the cards! Go for it! As usual, we had a dash to get home and probably the fastest Biryani eating experience of the last year.

Sharief Bhai Biryani

We went to Sharief Bhai’s almost 8 days back and I sincerely ask you to pardon the delay in reporting. The good thing is being late does not take away any of the fun in writing about it. Hope my readers will find it useful to try…..

Overall Sharief Bhai’s is a interesting set up. I am also told that there are few other branches but we stuck to Kalyan Nagar as has been our fervent endeavor. We missed my son as he was still recovering from a bug. Nevertheless, his passion is chocolate drinks and not soulful Biryanis. The food is served in enamel plates and it kind of makes it a bit nostalgic.

Overall the Biryani was good (the bar for good is high), but it still is not going to probably wow you! The surprise was the Nalli (Bone Marrow). As usual since its my daughter’s favorite I ended up with a single morsel to keep the records alive…..Am as jealous of any reader on this count.

As you see there were some after Biryani treats….we had to actually make a beating retreat as we were running late. I sent this snap to some of my friends and got a like from the Lucknowi’s and the Madraasi’s. You know the why so……:)

Discover the best Biryani Stop 4…Pot Biryani

This week has been a good but very tiring. Happy that we still went about our routine weekend to explore and it turns out 4/4 till now. We did a Pot Biryani fare and it tested our character for sure. At first, though the Biryani is served in an earthen pot I sincerely doubt if they were cooked in it. No claims by the promoters SJS Pot Biryani in Kalyan Nagar either. For those who wonder, its hard to cook Biryani in earthenware as it takes a lot of time and unless you have a strong earthen pot please do not try it. Slowly cooked Dum Biryani is possible but not if the heat is high.

As you might have realized that my daughter prefers Chicken Biryani. This is a paradox as her first choice of meat is mutton and only if she does not get that or prawns would she even think of chicken. But for Biryani, does not seem so….We went for the Chicken Biryani….house special and the regular Mutton Biryani. For those of who have gotten out of Hyderabad and Lucknow to try your taste buds to an unlikely candidate for Biryani: Chennai (then Madras) and have been to Amravati on RK Salai…this was a de-ja-vu. It was blended generously with green chilies and pre-fried meat that had a distinct sear on its body. I expected my kids to call it quits, but then one gets to know the tenacity of a Biryani lover. They went on to eat their fill. Makes my chest swell a bit…no a lot:)….

I want the taste of the amazing Biryani, nostalgia of Amravathi and my flattered ego ( thanks to my kids :)) to remain intact till the next time…Bye for now!

Simple invitation

So I am writing or rather exploring for my Biryanis after a while. Actually, the last three weeks were big on finding food hideouts…shunning the so called proxy Indian restaurants at Brick Lane Grill in east London to authentic Rajasthani and Gujarati fares. Anyways, that’s a tryst with my job or if you call it an occupational hazard. For now, today’s search landed us at Khyma. Given the small geographic radius of our endeavor it has been a surprising 3some so far.

We did the Hyderabad Chicken Biryani for my kids (Count on Sia…the boy still needs to develop a taste for good food) and Malabar Mutton Biryani for me.

The Mutton Biryani was plain very well cooked mutton into a ghee rice and a huge blend of fried onion. Simple yet divine. The Hyderabad Biryani would not meet the bar for the natives, but Sia found it “yummy”. I stuck to my choice and was relieved that I did not have to share much of it. There are fish & prawn biryanis too. My tip would be to avoid eating seafood in the monsoons as it is the breeding season for marine fish. wait till the Navratras are over and you can feast on the fresh catch.

Till we meet again, hopefully next week you should try your hand at making a Yakhni Pulao…My tips include using lean meat and taking the fat off. Use the bones for making your Yakhni stock and braise (first in ghee and then in stock) the mutton till almost 3/4th done. Add whole spices, saffron (dissolved in milk) and cook the grain and meat together for 45 mins in the stock itself. Add fried onion & cashews if you like. I don’t like giving out a detailed point by point recipes as it allows the reader to add his or her character to it. Ping me if it did not go well. Discover Best Biryani Stop 2: Zamindar @ Kalyan Nagar

Let me not start by being apologetic anymore….My hunt does not stop at what is defined by the technocrats as ‘Biryani‘ as there is no replacement for good taste and mastery in making the flavors blend in a subtle way. Stop 2 and we are spoilt for options on this street in Kalyan Nagar, Bangalore which has a dozen biryani places. We circled….literally, for almost 45 minutes before we zeroed in on Zamindar. The decision was well rewarded as our guest participant, my wife was not disappointed – she’s vegetarian and I am yet to find Vegetarian Biryani. She busies herself with God knows what chores and I am left with the menial jobs of driving my kids for their weekend coaching sessions. She had an amazing veg thali…….. Let me also be honest here, it did make me have second thoughts. I had to bribe myself with the thought of doing a Thali Blog sometime to focus back into the realism…

Back to business and keeping the Thali blog some other time, I ordered fusion… Mutton Avakkai Biryani and Chicken Boneless Biryani for the kids. The avakkai (mango pickle) was very mildly infused into a very robust Dum preparation and it not only made it a bit tangy but also made me twitch with the kick of the mango piece. I must tell you it was bliss… if you know what Andhra pickles are and what they can do in combination with rice, in this case actually a good pulao. The chicken boneless biryani was good but not over powering but you can also find it probably in many other places. Last but not the least; the hosts are amazing and they served us payasam at the end. On another day I would shrug and say “who eats payasam after a splendid biryani”. I am glad I was lazy and much more slower to respond than probably a few years back or else I would have missed it. Actually on 2 portions of it 🙂

Overall we got another thumbs up from Sia and 2 in 2 is a great beginning. Wishful thinking…but hope we really only discover the best. Believe me at some point I may change my rating for Bangalore from mediocre to good!

Some well wishers gave a bunch of suggestions and I used my privilege to let most of them pass by. I don’t want to rate on a scale as food is a experience that econometric can never do justice to. Math simply lacks this capability. More myth breakers to follow next week and hopefully we retain our 100% score. See you soon…..

Best Biryani Quest ….boarding point

As the title says, finally on-board the quest to taste and satiate the need and find the “Best Biryani”. Many a TV anchor or a celebrity chef will take you right from the streets of Hyderabad to the Avadhi Mahals for their recipe and page 3 chit-chat. Sometimes I wonder how strong is their urge to be heard, seen and their story being told. I chose a contrary path….to ambush the eateries some acclaimed and some just by the way side. To accompany me I have my seven year old daughter Sia (and Reyaansh who sometimes is a pile on… ) who will not use descriptive adjectives like “succulent pieces of lamb” or the “perfect harmony of spices”. She’ll just say – “Yummy” or “Not Nice” and you know what the review was. She leaves making the review palatable…. literally to me….pun intended.

Our first stop to kick start this was at Hyderabad Biryani Palace in Kalyan Nagar – next to GRT Gold Showroom, Bangalore. By the way we plan to do like a 10 eat out per locality as baseline before moving to a new one. So, well give you a lot to discover if you haven’t been the experimental type.

True to its name, the Biryani was yummy. Made me nostalgic of ‘Shadab’ at Hyderabad. Go for it if you are around and you wont be disappointed. Good news is its Biryani and not Pulao as many a connoisseur would call it. I remain incorruptible for flavor rather than being a pseudo perfectionist; so not much a difference. For next time we promise to encroach upon some of these myths 🙂 See you soon…..
